Green Smoothie Breakfast Bowl

The first time Andy and I ate this breakfast we were bouncing off the walls with energy. We've been eating it every morning for months now and we're still crazy about it.

This breakfast is rich in fibre, protein, iron, omega-3, antioxidants, and lots of essential vitamins and minerals

...and it tastes SO GOOD.


Ingredients


Serves 1


Smoothie

1 banana

handful of spinach

1 tbsp almond butter

1/2 medjool date

1/4 tsp cinnamon

1/2 cup water


Topping

1/3 cup muesli (use our homemade muesli recipe as a guide to make your own)

1 tbsp chia seeds

1 tbsp ground flax seeds

fruit/s of choice (we usually share an apple chopped into matchsticks)



Method


Blend together all of the smoothie ingredients. Add more water if the consistency is too thick. Pour the smoothie into a bowl and top with muesli, seeds, fruit, and anything else you like!

Variations and Suggestions



Smoothie

Add a kale leaf if you like.

Don't throw away your celery leaves! Keep them in a container in the fridge and add a few to your smoothie!

Swap the almond butter for tahini for a slightly more savoury, but equally delicious, flavour.

Add 1/8 tsp of spirulina - it adds extra depth, we love it. Experiment with more if you like the flavour.

You can add the chia seeds and flax seeds to the smoothie too - we just like their texture on top.

If you're running out the door you can experiment with adding your favourite grains, nuts, and seeds to the smoothie and drink your breakfast on the go. You'll need to add more water too.


Topping

Try your favourite fruit. Pineapple and mango are a real treat.

My favourite extras are coconut chips, more goji berries, walnuts, and toasted sesame seeds.

Use our homemade muesli recipe as a guide to make your own, or randomly sprinkle a selection of your favourite grains (oats, puffed buckwheat, puffed quinoa...), nuts (almonds, walnuts...), seeds (pumpkin seeds, sunflower seeds, hemp seeds...), and dried fruits (raisins, cranberries, dates, goji berries, inca berries...) over this smoothie bowl.


If you've got an early start you can prep this breakfast at night and store it in the fridge.
