Chocolate Hazelnut Spread

We use three ingredients to make our scrumptious nutella, and refined sugar isn't one of them.



Made from hazelnuts, dates, and raw cacao powder, this spread is high in protein, fibre, and healthy fats. It's also packed with antioxidants.


"Antioxidants are compounds that mop up free radicals [molecules produced when your body breaks down food] that cause cellular damage and hence premature ageing. Oxidation in the body is like biological rust, best avoided." - Dr. Andrew Morris.


Ingredients


300g hazelnuts

4 medjool dates

3 tbsp raw cacao powder



Method


1. Roast the hazelnuts

Pre-heat the oven to 180C. Spread the hazelnuts out on a tray and roast them for about 10 minutes, until their skin is cracked and they are lightly browned. Allow them to cool for a few minutes before removing their skin.

You can leave the skin on - most of their antioxidants are concentrated in the skin - but the result will just be a little more bitter.


2. Grind the hazelnuts

Add the hazelnuts to a food processor and grind them into a powder.


3. Add the dates

Add the dates to the food processor and blend for 10-15 minutes, until a smooth and runny butter forms.

You might need to stop every few minutes to scrape down the sides of the food processor. Don't be discouraged if it takes a little while to get the right consistency - just keep blending!


4. Add the cacao

Add the raw cacao powder to the food processor and blend to combine.


Have a taste and see if you want to add any more dates for sweetness or cacao for richness.



We love this spread on toast, pancakes, and porridge. You can also add a spoonful to smoothies, or serve a dollop alongside some fruit for a delicious and energising snack.
