Chocolate Peanut Butter Bites

Pro tip: Make a box of these on the weekend and keep them close throughout the week.

They are the perfect pick-me-up.



We make a box of these bites every couple of weeks. They take a few minutes to prepare, and they are great for serving with coffee or packing in a lunch box. We take them with us on hikes and flights, and they're a hit at dinner parties too.


These bites will keep in the fridge for up to 2 weeks (if you can resist eating them for that long).



Ingredients


100g roasted peanuts

5 tbsp peanut butter

4 medjool dates

3 tbsp oats

3 tbsp cacao powder

pinch of salt



Method


Place dates in a food processor and pulse until a paste or ball forms. Add everything else and pulse until well combined.

Press the mixture into the 1/2 tbsp measure and then whack it upside down against a clean surface to release it. Continue this process for the rest of the mixture. You can use a full tbsp measure to make bigger ones.

Store your bites in a container in the fridge.
